Here they are finally in jars! The new production of Cupid's Artichokes in oil with Agri Quality Mark of the Maremma Park.
Artichokes produced and harvested by us, then selected and processed for you, one by one, so that you will find in the jar all the flavor of yesteryear.
We tell you about our homemade recipe: once the artichokes have been harvested and cleaned of their tougher outer leaves, we trim the stems with a knife, remove the tips and put them in water and plenty of lemon to keep them from blackening. When this operation is finished, we take a pot where we put 2/3 white wine and 1/3 vinegar and then the herbs: sage, rosemary, garlic, and we bring everything to a boil. Once our prepared boils we do the cooking test we take a few artichokes and try to cook 3 or 4 minutes then drain and open if within a few minutes they become dark inside it means you need a few more minutes of cooking, but be careful not to overdo it, they must be crispy when you take them out, otherwise standing there they become softlet's proceed with boiling our artichokes at 20/25 at a time trying to get those of the same size together, done boiling they are drained on a white dishcloth (in Tuscany we say "cencio") and left there until the next day covered with another white rag. The next day, after sterilizing the jars, you put in the bottom of the oil, a few slices of garlic and peppercorns and start laying all the artichokes well finishing again with garlic and peppercorns, then you adjust the oil and on top you put the freshness-saving disc, wait a little bit if you need a little bit of oil and then close them well and put them in the pantry in the dark, where they should remain at least 2 or 3 months before tasting... This of course is the home procedure, but in the laboratories, they have their own procedure as required by law.
